- Brussels sprouts500 g
- olive oil2 tablespoons
- dried oregano1 teaspoon
- garlic powder1 teaspoon
- lemon1 whole
- Greek yogurt200 g
- cucumber1 small (approx. 120g)
- garlic1 clove
- fresh dill1 tablespoon
- salt1 teaspoon
- black pepper0,5 teaspoon
Instructions
- 1
Preheat your oven to 200°C (400°F).
- 2
Trim and halve the Brussels sprouts. Place them in a large mixing bowl.
- 3
Cut the chicken breasts into large chunks or leave whole as preferred. Add to the bowl with Brussels sprouts.
- 4
Drizzle 2 tablespoons of olive oil over the chicken and Brussels sprouts. Add 1 teaspoon dried oregano, 1 teaspoon garlic powder, 1/2 teaspoon black pepper, and 1/2 teaspoon salt. Zest the lemon and add the zest to the bowl. Toss everything together until well coated.
- 5
Spread the chicken and Brussels sprouts evenly on a large baking sheet lined with parchment paper.
- 6
Slice the lemon in half. Squeeze the juice of half the lemon over the chicken and sprouts. Reserve the other half for serving.
- 7
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the Brussels sprouts are golden and tender.
- 8
While the chicken bakes, prepare the tzatziki: Grate the cucumber and squeeze out excess moisture. In a bowl, combine 200g Greek yogurt, grated cucumber, 1 minced garlic clove, 1 tablespoon chopped fresh dill, juice from the remaining half lemon, and 1/2 teaspoon salt. Mix well and refrigerate until ready to serve.
- 9
Once the chicken and Brussels sprouts are done, remove from the oven. Serve hot with a generous dollop of tzatziki on the side. Enjoy your Oven-Baked Mediterranean Chicken with Brussels Sprouts and Tzatziki!
