Place the chicken breasts between two sheets of plastic wrap and gently pound them with a meat mallet until about 1 cm thick.

In a bowl, mix the spinach (chopped), low-fat cream cheese, sun-dried tomatoes (chopped), dried thyme, half the salt, and half the black pepper until well combined.

Lay each chicken breast flat and spread a quarter of the spinach and cheese mixture evenly over each one.
