Boil the potatoes (300g) until soft. Peel and mash them in a large bowl.
Boil the green peas (150g) for 3-4 minutes until tender. Drain and lightly mash them.
Finely chop the onions (100g) and green chillies (2 pieces).
In a pan, heat 1 tbsp of vegetable oil. Add chopped onions and sauté until translucent.
Add green chillies, red chilli powder (2 tsp), turmeric powder (1 tsp), coriander powder (2 tsp), and sauté for 1 minute.
Add the mashed potatoes and peas to the pan. Mix in salt (
5 tsp) and Maggi masala (1 sachet, 10g). Cook for 2-3 minutes, stirring well. Let the mixture cool.
In a separate bowl, mix whole wheat flour (200g) with a pinch of salt and enough water to make a soft, smooth dough. Rest for 10 minutes.
Divide the dough and the stuffing into equal portions (about 6-8 balls each).
Roll out a dough ball into a small disc. Place a portion of the potato-pea stuffing in the center. Bring the edges together to seal and flatten gently.
Roll the stuffed ball gently into a paratha, about 6-7 inches in diameter.
Heat a tawa or skillet. Place the paratha on it and cook for 1-2 minutes on each side, applying a little oil (from the remaining 1 tbsp) until golden brown and crisp.
Repeat with the remaining dough and stuffing.
Serve hot with yogurt, pickle, or chutney.
