Soak the 200g soya bean chunks in hot water for 10-15 minutes, then drain and squeeze out excess water.
In a small bowl, mix 1 teaspoon cornflour with 1 tablespoon water to make a slurry. Set aside.
Heat 1 tablespoon vegetable oil in a large pan or wok over medium-high heat.
Add 2 cloves minced garlic and 1 teaspoon grated ginger. Sauté for 30 seconds until fragrant.

Sprinkle 1 teaspoon black pepper and 1 teaspoon red chilli flakes. Stir to combine.
Add the cornflour slurry and cook for 1-2 minutes until the sauce thickens and coats the soya chunks and vegetables.
Taste and adjust seasoning if needed. Remove from heat.
Garnish with 1 tablespoon chopped spring onion and serve hot.
