Preheat your oven to 200°C (400°F).

Wash the potatoes thoroughly and prick them several times with a fork. Place them on a baking tray and bake for 50-60 minutes, or until the skins are crisp and the insides are soft.

While the potatoes are baking, chop the bacon into small pieces. Heat a frying pan over medium heat and cook the bacon until crispy. Remove and set aside on a paper towel.

Finely chop the onion and mince the garlic. In the same pan, add the butter, then sauté the onion and garlic until soft and fragrant, about 3-4 minutes.

Cut the broccoli into small florets. Steam or blanch the broccoli for 3-4 minutes until just tender, then drain and set aside.

Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently squeeze the ends to open them up.

Fluff the inside of each potato with a fork, then season with salt and pepper. Add a little of the sautéed onion and garlic, steamed broccoli, crispy bacon, and half of the grated cheddar cheese into each potato. Mix gently.
