Preheat your oven to 200°C (400°F).
Wash the potatoes thoroughly and prick them several times with a fork. Place them on a baking tray and bake for 50-60 minutes, or until the skins are crisp and the insides are soft.

Top each potato with the remaining cheddar cheese.
Return the stuffed potatoes to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
