- jerk chicken breast300 g
- ripe plantain200 g
- red onion100 g
- bell pepper100 g
- mozzarella cheese100 g
- jerk marinade2 tbsp
- olive oil2 tbsp
Instructions
- 1
Preheat your oven to 220°C (428°F).
- 2
Slice the chicken breast into strips and marinate with the jerk marinade. Let it sit for at least 15 minutes.
- 3
Peel and slice the ripe plantain into thin rounds.
- 4
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the marinated chicken and cook for 6-8 minutes until fully cooked. Remove and set aside.
- 5
In the same skillet, add the remaining 1 tablespoon of olive oil. Fry the plantain slices for 2-3 minutes per side until golden and caramelized. Remove and set aside.
- 6
Thinly slice the red onion and bell pepper.
- 7
Roll out the pizza dough on a floured surface to your desired thickness.
- 8
Evenly spread half of the mozzarella cheese over half of the dough, leaving a border around the edge.
- 9
Layer the cooked jerk chicken, fried plantain, red onion, and bell pepper over the cheese.
- 10
Top with the remaining mozzarella cheese.
- 11
Fold the other half of the dough over the filling to form a stuffed pizza (calzone shape). Pinch the edges to seal.
- 12
Transfer to a baking tray lined with parchment paper.
- 13
Bake in the preheated oven for 18-22 minutes, or until the crust is golden brown and cooked through.
- 14
Remove from the oven, let cool for a few minutes, then slice and serve hot.
