Rinse the toor dal thoroughly and cook it in a pressure cooker with 2 cups of water and turmeric powder until soft and mushy.

In a pot, heat the oil over medium heat. Add mustard seeds and let them splutter.

Add cumin seeds, dried red chilies, and curry leaves. Sauté for a few seconds until fragrant.

Add the chopped onion and sauté until it turns translucent.

Add the chopped tomato and cook until it becomes soft.

Add the mixed vegetables and sauté for a couple of minutes.

Add the sambar powder and mix well.

Pour in the cooked toor dal along with the remaining 2 cups of water. Stir to combine.
