Rinse the toor dal thoroughly and soak it in water for about 15 minutes.

In a pressure cooker, add the soaked toor dal and 3 cups of water. Cook for 3-4 whistles until the dal is soft and mushy.

In a separate pot, heat oil over medium heat. Add mustard seeds and let them splutter.

Add cumin seeds, dried red chilies, and curry leaves. Sauté for a few seconds until aromatic.

Add chopped onion and sauté until it turns translucent.

Add chopped tomato and cook until it becomes soft.

Add the mixed vegetables, turmeric powder, and sambar powder. Stir well.

Add the cooked toor dal to the pot along with 1 cup of water. Mix well.
