In a pot, add the rinsed lentils and 3 cups of water. Bring it to a boil, then reduce the heat and let it simmer until the lentils are soft and cooked through, about 20-25 minutes.

While the lentils are cooking, heat the oil in a pan over medium heat. Add the mustard seeds and cumin seeds, and let them splutter.

Add the fresh fenugreek leaves (methi) to the pan and sauté for 3-4 minutes until they wilt.
