1Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes.
Cook the brown rice according to the package instructions.
In a large skillet, heat the olive oil over medium heat. Add the onions and sauté until translucent.
Add the black beans, corn, and chili powder to the skillet. Stir well and cook for another 5 minutes.
Combine the cooked rice with the bean and corn mixture. Mix thoroughly.
Stuff each bell pepper with the rice mixture, pressing down gently to pack it in.
Place the stuffed peppers in a baking dish and cover with foil.
Bake in the preheated oven for 30-35 minutes, or until the peppers are tender.
Remove from the oven and let cool slightly before serving.
