Rinse the split yellow moong dal thoroughly under running water and soak it for 15-20 minutes.
Chop the mixed vegetables, onion, tomato, and green chilies. Set aside.
In a pressure cooker or large pot, heat the vegetable oil over medium heat.
Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn translucent.
Add ginger-garlic paste and green chilies. Sauté for 1-2 minutes until fragrant.
Add chopped tomatoes and cook until they soften.
Add the mixed vegetables and sauté for 2-3 minutes.
Add turmeric powder, coriander powder, and salt. Mix well.
Drain the soaked dal and add it to the pot. Mix everything together.
Pour in 3 cups of water and stir well.
If using a pressure cooker, close the lid and cook for 3-4 whistles. If using a pot, cover and simmer for 25-30 minutes or until the dal and vegetables are soft.
Once cooked, gently mash the dal and vegetables for a creamy texture. Adjust salt and water if needed.
Garnish with chopped cilantro before serving.
Serve hot with rice or roti.
