Heat the olive oil in a large pot over medium heat.
Add the pork neckbones and brown them on all sides, about 5-7 minutes.
Remove the neckbones and set them aside.

Stir well, cover, and continue to simmer for another 30 minutes, or until the potatoes are tender.
