Preheat your oven to 350°F (175°C).
Heat the olive oil in a large oven-safe pot over medium-high heat.
Add the pork neckbones and brown them on all sides. This should take about 5-7 minutes.
Remove the neckbones from the pot and set them aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
Add the beef broth, salt, black pepper, and rosemary to the pot. Stir to combine.
Return the neckbones to the pot, making sure they are submerged in the liquid.
Cover the pot and transfer it to the preheated oven. Braise for
5 hours.
While the neckbones are braising, peel and cut the potatoes into quarters.
After
5 hours, add the potatoes and green beans to the pot.
Cover the pot again and continue to braise for an additional 30 minutes, or until the potatoes are tender.
Remove the pot from the oven and let it rest for a few minutes before serving.
