Preheat your oven to 350°F (175°C).
In a large pot, bring water to a boil and add the pork neckbones. Boil for about 30 minutes to tenderize.
While the neckbones are boiling, peel and slice the potatoes into thin rounds.
Trim and cut the green beans into bite-sized pieces.
Finely chop the onion and mince the garlic.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
Add the green beans to the skillet and cook for another 5 minutes, stirring occasionally.
Drain the neckbones and place them in a large casserole dish.
Layer the sliced potatoes over the neckbones.
Spread the sautéed onion, garlic, and green beans over the potatoes.
Sprinkle the salt, black pepper, and paprika evenly over the casserole.
Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes.
Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
