Preheat your oven to 220°C (425°F).
Peel the cassava and cut it into fry-shaped sticks. Rinse well and pat dry.
Toss the cassava fries with 2 tbsp olive oil and 1 tsp sea salt. Spread them on a baking sheet in a single layer.
