Preheat your oven to 200°C (400°F) for the plantain chips.

Grill the pineapple rings for 1-2 minutes per side until caramelized and lightly charred.
Toast the brioche buns lightly on the grill or in a toaster.
Assemble the burgers: Place arugula on the bottom half of each bun, top with a cheesy beef patty, a grilled pineapple ring, 2 slices of bacon, and the top bun.
