Peel the cassava and cut it into fry-shaped sticks. Rinse well and pat dry.

Toss the cassava fries with 2 tbsp olive oil and 1 tsp sea salt. Spread them on a baking sheet in a single layer.

Bake the cassava fries for 25-30 minutes, flipping halfway through, until golden and crispy.

While the fries are baking, grill the eggplant slices until tender and lightly charred, about 2-3 minutes per side.

Slice the avocado thinly and set aside.
