Preheat your oven to 160°C (320°F).
Rub the 800g beef brisket with 2 tbsp jerk seasoning, ensuring it is evenly coated.
Place the brisket in a roasting dish, cover with foil, and cook in the oven for 3 hours or until tender. Let it rest, then shred the meat using two forks.
While the brisket is cooking, peel and cut the 800g sweet potatoes into fries. Toss them with 2 tbsp olive oil and 1 tsp sea salt.
Spread the sweet potato fries on a baking tray in a single layer. Bake at 220°C (428°F) for 25-30 minutes, turning halfway through, until golden and crispy.
Cook 8 slices of bacon in a skillet over medium heat until crispy. Set aside on paper towels.
Slice 1 tomato and wash 1 cup lettuce leaves.
Toast 4 burger buns lightly in a pan or toaster.
Assemble the burgers: Spread
5 tbsp mayonnaise on the bottom half of each bun. Add lettuce, tomato slices, a generous portion of shredded jerk brisket, 2 slices of bacon, and 1 slice of cheddar cheese per burger. Top with the other half of the bun.
Serve the Caribbean Jerk Brisket Burgers hot with the sweet potato fries on the side. Enjoy!
