Preheat your oven to 220°C (428°F) and line a baking tray with parchment paper.

Rinse the bulgur wheat under cold water, then soak it in warm water for 20 minutes. Drain well and squeeze out any excess water.

Finely chop the onion.

In a large bowl, combine the soaked bulgur wheat, whole wheat flour, lean ground beef, chopped onion, 1 tablespoon of zaatar, olive oil, salt, and black pepper. Mix thoroughly until a dough forms.

Divide the dough into 6 equal portions. Roll each portion into a ball, then flatten into a round flatbread about 1 cm thick.

Place the flatbreads on the prepared baking tray. Sprinkle the remaining 1 tablespoon of zaatar evenly over the tops.
