In a bowl, mix 200g semolina, 100g all-purpose flour, and 1 tsp baking soda. Add water gradually to form a dough. Let it rest for 30 minutes.

Roll out the dough into small circles and deep fry until golden brown to make puris. Set aside.

In a separate bowl, mash 200g boiled potatoes and mix with 100g chickpeas, 1 tsp cumin powder, 1 tsp chaat masala, and salt to taste.

For the pani, blend 1 cup mint leaves, 1 cup coriander leaves, 2 green chilies, and 1 cup tamarind pulp. Add 2 tbsp jaggery, 1 tsp red chili powder, and salt to taste. Adjust water to achieve desired consistency.
