Paneer Tikka Masala

Cut the paneer into 1-inch cubes and set aside.

In a mixing bowl, combine the yogurt, 1/2 tbsp ginger garlic paste, 1/2 tsp cumin powder, 1/2 tsp coriander powder, 1/2 tsp chili powder, 1/2 tsp garam masala, and 1/2 tsp salt. Mix well to form a marinade.

Add the paneer cubes to the marinade and coat them evenly. Let it marinate for at least 20 minutes.

While the paneer is marinating, finely chop the onions and tomatoes.

Heat 1 tbsp vegetable oil in a pan over medium heat. Add the chopped onions and sauté until golden brown.

Add the remaining ginger garlic paste and sauté for 1 minute until fragrant.

Add the chopped tomatoes and cook until they turn soft and oil starts to separate.

Add the remaining cumin powder, coriander powder, chili powder, garam masala, and salt. Mix well and cook for 2-3 minutes.

Allow the mixture to cool slightly, then blend it into a smooth paste.

In the same pan, heat the remaining 1 tbsp oil. Add the marinated paneer cubes and cook until they are lightly golden on all sides. Remove and set aside.

Pour the blended masala paste back into the pan and cook for 2-3 minutes.

Add the cooked paneer cubes to the masala and mix gently. Simmer for 5 minutes, allowing the flavors to combine.
