1Preheat your oven to 180°C (350°F).
Peel and slice the plantains into thin rounds.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the plantain slices and cook until golden brown on both sides. Remove and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté until the vegetables are soft.
Add the ground beef to the skillet and cook until browned. Stir in the cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
In a large bowl, beat the eggs and mix in the breadcrumbs.
Add the cooked beef mixture to the bowl and mix well.
Grease a baking dish and layer the bottom with half of the cooked plantain slices.
Spread the beef mixture evenly over the plantain layer.
Top with the remaining plantain slices.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cake is set.
Let it cool for a few minutes before slicing and serving.
