1Wash and peel the russet potatoes. Cut them into even sticks, about 1 cm thick.
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
Drain the potatoes and pat them completely dry with a clean kitchen towel.
In a large, heavy-bottomed pot or deep fryer, heat the peanut oil to 150°C (300°F).
Working in batches, fry the potatoes for 4-5 minutes until they are soft but not browned. Remove them with a slotted spoon and drain on paper towels.
Increase the oil temperature to 190°C (375°F).
Fry the potatoes again in batches for 2-3 minutes, or until golden brown and crispy.
Remove the fries from the oil and drain on fresh paper towels.
While still hot, sprinkle the fries evenly with sea salt.
Serve immediately for the best texture and flavor.
