Rinse the masoor dal thoroughly under running water until the water runs clear.
In a large pot, add the rinsed masoor dal and 4 cups of water. Bring it to a boil.
Reduce the heat to a simmer and add the turmeric powder. Cook for about 20-25 minutes or until the dal is soft and fully cooked.
While the dal is cooking, finely chop the onion, tomatoes, garlic, and ginger.
In a separate pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
Add the chopped onions to the pan and sauté until they turn golden brown.
Add the chopped garlic and ginger to the pan and sauté for another 2-3 minutes.
Add the chopped tomatoes to the pan and cook until they become soft and mushy.
Add the red chili powder and salt to taste. Mix well.
Once the dal is cooked, add the onion-tomato mixture to the pot of dal. Stir well to combine.
Let the dal simmer for another 5-10 minutes to allow the flavors to meld together.
Serve the masoor dal hot with rice or roti.
