Preheat your oven to 200°C (400°F).

Line a large baking sheet with parchment paper or lightly grease it with a bit of olive oil.

Slice the zucchinis and red bell peppers into bite-sized pieces. Peel and cut the red onion into wedges.

In a large bowl, toss the zucchini, red bell peppers, and red onion with 1 tablespoon of olive oil and half of the salt and black pepper. Spread the vegetables evenly on one side of the prepared baking sheet.

In a small bowl, mix together the smoked paprika, chili powder, garlic powder, remaining salt, and black pepper.

Pat the salmon fillets dry with paper towels. Rub each fillet with the remaining 1 tablespoon of olive oil, then sprinkle the spice mixture evenly over the top of each fillet.
