Classic Moong Dal Khichdi

Rinse the rice and moong dal together until the water runs clear to remove any impurities.

In a pressure cooker or a large pot, combine the rinsed rice and dal, turmeric, salt, and water. Stir to mix everything well.

Cook the mixture. If using a pressure cooker, cook for 3-4 whistles on medium heat. If using a pot, bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice and dal are soft and fully cooked.

While the khichdi is cooking, heat ghee in a small pan over medium heat. Add cumin seeds and asafoetida. Once the cumin seeds start to crackle, add the grated ginger and sauté for a few seconds until fragrant.
