Paneer Kofta Biryani
Ingredients
- paneer400 g
- basmati rice2 cups
- yogurt1 cup
- onions2 pieces
- garlic4 cloves
- ginger1 inch
- green chilies2 pieces
- mint leaves0,5 cup
- coriander leaves0,5 cup
- garam masala1 tsp
- turmeric1 tsp
- cumin powder1 tsp
- red chili powder0,5 tsp

- ghee4 tbsp

Grate the paneer and mix it with a pinch of salt, half of the garam masala, and half of the turmeric. Form small balls to make koftas.

Heat 2 tablespoons of ghee in a pan and fry the koftas until golden brown. Remove and set aside.

Wash and soak the basmati rice in water for 30 minutes. Drain and set aside.

In a large pot, heat the remaining ghee. Add sliced onions and sauté until golden brown.

Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute.

Add the remaining turmeric, cumin powder, red chili powder, and salt. Stir well.

Add yogurt and mix thoroughly. Cook for 2-3 minutes.

Add the soaked rice and 4 cups of water. Bring to a boil.

Reduce the heat, cover, and let it simmer until the rice is cooked and water is absorbed.

Gently mix in the fried koftas, mint leaves, and coriander leaves.
