1Heat the olive oil in a large pot over medium-high heat.
Add the beef stew meat and cook until browned on all sides.
Remove the beef from the pot and set aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the diced bell peppers and cook for another 3-4 minutes.
Return the beef to the pot and add the beef broth, diced tomatoes, black pepper, paprika, and salt.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about
5 to 2 hours, or until the beef is tender.
Stir occasionally and adjust seasoning if necessary.
