Prepare all the vegetables: peel and slice the potatoes into thin strips, slice the onion, red bell pepper, mushrooms, celery stalks, and carrot. Finely chop the fresh red chillies.

Heat 1 tablespoon of olive oil (15g) in a large wok or skillet over medium-high heat.

Add the pork belly pieces and stir-fry for 5-7 minutes until browned and crispy. Remove the pork belly from the pan and set aside.
