Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the diced chicken breast and season with half of the salt, black pepper, and dried thyme. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced mushrooms and baby marrow. Sauté for 4-5 minutes until the vegetables are softened and the mushrooms have released their moisture.
