South Indian Sambar Rice
Ingredients

Wash the rice and toor dal thoroughly and soak them in water for about 15 minutes.

In a pressure cooker, add the soaked rice and toor dal along with 4 cups of water. Cook for 3-4 whistles or until they are soft and mushy.

In a separate pan, heat the oil over medium heat. Add mustard seeds and let them splutter.

Add cumin seeds, curry leaves, and asafoetida. Sauté for a few seconds.

Add the chopped onion and sauté until it turns golden brown.

Add the chopped tomato and cook until it becomes soft and mushy.

Add the diced potato, carrot, drumstick, and radish. Sauté for a couple of minutes.

Add the sambar powder, turmeric powder, and salt. Mix well.

Add a little water if needed and cook the vegetables until they are tender.

Once the vegetables are cooked, add the cooked rice and dal mixture to the pan. Mix everything well.
