Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immediately transfer to ice-cold water to retain the green color.

Blend the blanched spinach into a smooth puree and set aside.

Heat the vegetable oil in a pan over medium heat. Add the cumin seeds and let them splutter.

Add the finely chopped onion and sauté until golden brown.

Add the ginger garlic paste and sauté for another 2 minutes until the raw smell disappears.

Add the finely chopped tomatoes and cook until they turn soft and the oil starts to separate.
