Rinse the bulgur wheat under cold water and let it soak for about 30 minutes. Drain well.

In a large bowl, combine the ground beef, soaked bulgur, ground cumin, ground coriander, salt, and black pepper. Mix well until the mixture is smooth and well combined.

Finely chop the onion and garlic. In a pan, heat a small amount of vegetable oil and sauté the onion and garlic until they are soft and translucent.

Add the fresh spinach to the pan and cook until wilted. Remove from heat and let it cool.
