1In a large pot, add the chicken breasts and cover with water. Bring to a boil, then reduce heat and simmer until the chicken is cooked through, about 15-20 minutes.
Remove the chicken from the pot and shred it using two forks.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
Add the shredded chicken back to the pot along with the black beans, corn, diced tomatoes, tomato sauce, taco seasoning, chicken broth, and chopped jalapeño.
Stir to combine all ingredients and bring the mixture to a simmer.
Let the soup simmer for 20-30 minutes to allow the flavors to meld together.
Taste and adjust seasoning if necessary.
Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, or fresh cilantro.
