Ingredients

Rinse the toor dal thoroughly and soak it in water for about 15-20 minutes.

In a pressure cooker, add the soaked toor dal, 2 cups of water, and turmeric powder. Cook for 3-4 whistles until the dal is soft and mushy.

In a separate pan, heat oil over medium heat. Add mustard seeds and let them splutter.

Add curry leaves and chopped onions. Sauté until the onions turn translucent.

Add chopped tomatoes and cook until they become soft.

Add the mixed vegetables and sauté for a few minutes.

Add sambar powder and mix well.

Add the cooked dal to the pan along with 2 more cups of water. Stir well.
