Preheat your oven to 375 degrees F (190 degrees C).
Cook the jumbo pasta shells according to the package instructions until al dente, then drain and set aside to cool.
In a mixing bowl, combine the ricotta cheese, chopped spinach, grated parmesan cheese, and egg. Season with salt and pepper to taste, and mix well.
Spread 1 cup of marinara sauce on the bottom of a baking dish.
Take each pasta shell and stuff it with the ricotta and spinach mixture, then place them open side up in the baking dish.
Once all the shells are stuffed and placed in the dish, pour the remaining cup of marinara sauce over the top of the shells.
Sprinkle the shredded mozzarella cheese evenly over the sauce.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and slightly golden.
Remove from oven and let it cool for a few minutes before serving.
