Preheat your oven to 375 degrees F (190 degrees C).
Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside to cool.
In a mixing bowl, combine the ricotta cheese, chopped spinach, grated parmesan cheese, egg, and a pinch of salt and pepper. Mix well until all ingredients are evenly incorporated.
Spread 1 cup of marinara sauce on the bottom of a baking dish.
Take each cooled pasta shell and stuff it generously with the ricotta and spinach mixture.
Place the stuffed shells in the baking dish on top of the sauce.
Pour the remaining 1 cup of marinara sauce over the stuffed shells.
Sprinkle the shredded mozzarella cheese over the top of the shells and sauce.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Remove from oven and let it cool for a few minutes before serving.
