Palak Paneer

40 min Medium

Ingredients

4 Servings
  • Paneer (Indian cottage cheese)250 grams
  • Spinach1 bunch
  • Onions1 medium
  • Tomatoes2 medium
  • Garlic4 cloves
  • Ginger1 inch piece
  • Garam masala1 teaspoon
  • Cumin seeds1 teaspoon
  • Cream100 milliliters
  • Lemon juice1 tablespoon
  • Cilantro2 tablespoons

Instructions

  1. 1

Blanch the spinach in boiling water for 2-3 minutes until it is just wilted. Drain and rinse under cold water to preserve its green color. Puree the spinach in a blender and set aside.

  2. 2

Dice the paneer into cubes and fry them in a pan with a little oil until golden brown. Set aside on paper towels to drain excess oil.

  3. 3

Finely chop the onions, tomatoes, garlic, and ginger. Heat oil in a pan and add cumin seeds. Once they start to crackle, add the chopped onions and sauté until they turn translucent.

  4. 4

Add the garlic and ginger and fry for another minute before adding the chopped tomatoes. Cook until the tomatoes are soft and the oil starts to separate.

  5. 5

Add the spinach puree to the pan and cook for 5 minutes. If the mixture is too thick, add a little water to reach the desired consistency.

  6. 6

Add the fried paneer cubes to the spinach mixture and cook for another 5 minutes so that the paneer absorbs the flavors.

  7. 7

Stir in the garam masala and cream, and cook for another minute. Turn off the heat and add the lemon juice.

  8. 8

Garnish with chopped cilantro before serving. Serve hot with flatbread or rice.
