Ingredients

Blanch the spinach in boiling water for 2-3 minutes until it is just wilted. Drain and rinse under cold water to preserve its green color. Puree the spinach in a blender and set aside.

Dice the paneer into cubes and fry them in a pan with a little oil until golden brown. Set aside on paper towels to drain excess oil.

Finely chop the onions, tomatoes, garlic, and ginger. Heat oil in a pan and add cumin seeds. Once they start to crackle, add the chopped onions and sauté until they turn translucent.

Add the garlic and ginger and fry for another minute before adding the chopped tomatoes. Cook until the tomatoes are soft and the oil starts to separate.
