Oreo Cheesecake Bites

   Preheat your oven to 325°F (163°C) and line a muffin tin with paper liners.

   Place an Oreo cookie at the bottom of each liner to serve as the crust.

   In a mixing bowl, beat the cream cheese until smooth.

   Add the sugar and vanilla extract to the cream cheese and mix until well combined.

   Add the egg to the mixture and beat until just combined.

   Spoon the cream cheese mixture over each Oreo cookie in the muffin tin, filling each liner about 3/4 full.

   Bake in the preheated oven for 15-18 minutes, or until the cheesecake is set.

   Remove from the oven and allow to cool to room temperature, then refrigerate for at least 2 hours before serving.
