Spicy Soya Chunk Fried Rice

Rinse the basmati rice thoroughly and soak it in water for 20 minutes. Drain and cook the rice in plenty of water until just done (grains should be separate). Spread the rice on a plate to cool.

Boil 2 cups of water in a saucepan. Add the soya chunks and a pinch of salt. Cook for 5 minutes, then drain and rinse the soya chunks with cold water. Squeeze out excess water and set aside.

Finely chop the onion, garlic, green chilies, and fresh coriander.

Heat the vegetable oil in a large wok or pan over medium-high heat. Add the chopped garlic and sauté for 30 seconds until fragrant.

Add the chopped onion and green chilies. Sauté for 2-3 minutes until the onion turns translucent.

Add the ginger garlic paste and sauté for another minute.

Add the boiled soya chunks and stir-fry for 2-3 minutes until they start to brown slightly.
