Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
In a large bowl, mix the ground lamb with 1/2 cup of yogurt, minced garlic, grated ginger, chopped green chilies, garam masala, turmeric, cumin powder, red chili powder, and salt. Form the mixture into small koftas (meatballs).
Heat 2 tablespoons of ghee in a pan over medium heat. Fry the koftas until they are browned on all sides. Remove and set aside.
In the same pan, add the remaining ghee and sliced onions. Cook until the onions are golden brown.
Add the remaining yogurt to the pan and cook for a few minutes. Add the koftas back to the pan and mix well.
In a large pot, bring water to a boil. Add the soaked rice and cook until it is 70% cooked. Drain the rice.
In a large pot, layer half of the rice, then add the kofta mixture, mint leaves, and coriander leaves. Top with the remaining rice.
Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes to allow the flavors to meld together.
Serve the Lamb Kofta Dum Biryani hot, garnished with additional mint and coriander leaves if desired.
