In a separate bowl, beat the eggs, then add the natural yogurt, olive oil, orange juice, and orange zest. Mix well until combined.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; a few lumps are fine.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with a little olive oil if needed.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
Serve warm, optionally garnished with extra orange zest or a dollop of yogurt.
