1Rinse the red lentils under cold water until the water runs clear.
Finely chop the large onion and garlic cloves.
Grate or finely chop the ginger.
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
Add the garlic and ginger, and sauté for another 2 minutes.
Stir in the curry powder and chili powder, and cook for 1 minute to release the flavors.
Add the rinsed lentils, canned tomatoes, and coconut milk to the pot.
Season with salt and black pepper.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the lentils are tender.
Stir occasionally to prevent the lentils from sticking to the bottom of the pot.
Once the lentils are cooked, taste and adjust the seasoning if necessary.
Garnish with fresh cilantro before serving.
Serve hot with rice or naan bread.
