1Rinse the lentils under cold water until the water runs clear.
Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic, curry powder, ground turmeric, and ground ginger to the pot. Stir and cook for another 1-2 minutes until fragrant.
Add the rinsed lentils to the pot and stir to coat with the spices.
Pour in the coconut milk and water, and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.
Stir in the fresh spinach and continue to cook until the spinach has wilted, about 3-5 minutes.
Taste and adjust seasoning if necessary. Serve the lentil spinach curry warm with rice or naan bread.
