In a shallow bowl, combine the plain flour, paprika, garlic powder, onion powder, dried thyme, dried oregano, black pepper, and salt. Mix well.
In another bowl, beat the eggs until smooth.
Place the crushed cornflakes in a third shallow bowl.
Pat the chicken drumsticks dry with paper towels. Dip each drumstick first into the seasoned flour, coating evenly. Shake off any excess.
Next, dip the floured drumstick into the beaten eggs, ensuring it is fully coated.
Finally, roll the drumstick in the crushed cornflakes, pressing gently so the coating sticks well.
Arrange the coated drumsticks on the prepared baking tray. Drizzle or brush the remaining 1 tbsp of olive oil over the top of the chicken pieces.
Bake in the preheated oven for 35-40 minutes, turning once halfway through, until the chicken is golden, crispy, and cooked through (internal temperature should reach 75°C/165°F).
