1Wash and season the chicken thighs with salt, black pepper, thyme, curry powder, and paprika. Set aside.
Blend the tomatoes, red bell pepper, onion, garlic, ginger, and scotch bonnet pepper until smooth.
Heat the vegetable oil in a large pot over medium heat.
Add the seasoned chicken thighs to the pot and brown on all sides. Remove the chicken and set aside.
Pour the blended mixture into the pot and cook for about 10-15 minutes, stirring occasionally, until the sauce thickens and the oil begins to separate from the sauce.
Return the browned chicken thighs to the pot, cover, and simmer on low heat for 20-30 minutes, or until the chicken is fully cooked and tender.
Adjust seasoning with additional salt and pepper if needed.
Serve hot with rice, plantains, or your preferred side dish.
