    Wash, peel, and cut the potatoes into medium-sized cubes. Finely chop the onions, tomatoes, and fresh coriander leaves.

    Heat 2 tbsp of vegetable oil in a large pan over medium heat. Add 1 tsp cumin seeds and let them splutter for a few seconds.

    Add the chopped onions and sauté until they turn golden brown.

    Add the chopped tomatoes and cook for 3-4 minutes until they soften.

    Add 1 tsp coriander powder, 1 tsp turmeric powder, 1 tsp red chili powder, and 1 tsp salt. Mix well and cook for another 2 minutes.
