Rinse the quinoa thoroughly under cold water. In a medium saucepan, add 200g quinoa and 400ml water. Bring to a boil, then add the chicken bouillon cube. Stir to dissolve, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is tender.

Fluff the cooked quinoa with a fork and set aside to cool slightly.

In a large non-stick skillet or wok, heat 1 tbsp (15ml) garlic oil and 1 tbsp (14g) butter over medium-high heat until the butter is melted and bubbling.

Add the 300g frozen mixed vegetables to the skillet. Stir-fry for 4-5 minutes until the vegetables are heated through and slightly tender.

Add the cooked quinoa to the skillet with the vegetables. Stir well to combine and cook for another 2-3 minutes, allowing the quinoa to fry slightly.

Pour in 2 tbsp (30ml) soy sauce and stir to evenly coat the quinoa and vegetables. Cook for 1 more minute.
