Vegetable Poha (Aval Upma)
Ingredients
- aval (flattened rice)200 g
- carrot80 g
- potato120 g
- green peas70 g
- onion100 g

- curry leaves10 leaves
- vegetable oil2 tbsp

Rinse the 200g aval (flattened rice) in a colander under running water for 1-2 minutes. Drain well and set aside to soften.

Heat 2 tbsp vegetable oil in a large pan over medium heat.

Add 10 curry leaves and 2 chopped green chilies. Sauté for 30 seconds.

Add 1 medium chopped onion (100g) and sauté until translucent.

Add 1 medium diced potato (120g) and 1 medium diced carrot (80g). Cook for 3-4 minutes, stirring occasionally.
